Panzanella Salad – A salad even my husband will eat for dinner

It is currently 91 degrees out, and come dinner time, all I can think about making is chilled, fresh and light. It’s just too hot.

However, it turns out my husband cannot live on leafy greens alone. He has made this very clear.

Enter Panzanella Salad.

Did we mention it uses bread. Old bread in fact, like the ends that you don’t know what to do with.

It has a salty and grilled flavor. It feels substantial. And it has all the fresh flavors from a summer garden. You also don’t have to turn on your stove to make it. Win, win, win,win.  We add grilled flank steak to ours and eat on it for days!
