We’re proud to feature a recipe for Mexican Molletes from our Assistant Store Manager, Lia, who’s been working at Empire Baking Company for 7 years. The secret to making the best molletes? Use refried beans that aren’t made with lard.
Pico de gallo
– 3 tomatoes, diced
– 1/4 of a medium onion, diced
– 1 jalapeño pepper, diced
– Juice of lime to taste
– Salt to taste
– Cilantro, chopped for garnish
La Sierra Refried beans (1 can without lard)
Cheese slices, manchego, swiss – any melting cheese
Butter (to spread on rolls)
Empire panini rolls
Preheat oven to 350 degrees. Split panini rolls and butter. Spread refried beans, then cheese and bake until cheese is melted, approximately 10 minutes. Top with pico de gallo.
